Chicken Taco Chilli.

My pinterest adventures / $5 meal days resulted in another night of trying new food. Here's to the Chicken Taco chilli. I would also like to note it's a weight watchers meal , so you KNOW it's healthy for ya.

Crock Pot Chicken Taco Chili

1 onion, chopped 
1 16-oz can black beans 
1 16-oz can kidney beans 
1 8-oz can tomato sauce 
10 oz package frozen corn kernels (used 2 small cans of corn kernels)
2 14.5-oz cans diced tomatoes  
1 packet taco seasoning 
1 tbsp cumin 
1.5 tbsp chili powder 
24 0z. (3) boneless skinless chicken breasts 
chili peppers, chopped (optional)
chopped fresh cilantro 

Combine beans, onion, chili peppers, corn, tomato sauce, diced tomatoes,  cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).  

This is really yummy. I also think it was perfect since it's been freezing outside lately. Since my craving for soups has kicked into high gear I love it. I also love that it's healthy for you ( 4 ww points) . Gregg says if he could he would make it hotter. He also liked how if he wants to he can add stuff to it. 

It's another one of those meals that is essentially going to cost you more than $5 dollars (but not much more since I got all the canned stuff for like 50cents or less)  but last you a long time if you're just a family of 2. If you're a family of 4 it would probably last a night or 2 depending on how much you eat. So when you break down the costs over time it will definitely be in the $5 range. 

I love that leftovers means I don't have to cook something tomorrow.

  1. This sounds so good! I made some broccoli potato cheese soup tonight because of the cold. Soups are perfect for this weather! :] And this is another one that I could totally handle making! Haha.
