
So I've been trying super hard to make dinners lately. Last night I actually followed through and made dinner. Let's all applaud my awesomeness. I sat down in bed on pinterest and called out things I had pinned to Gregg to see what he'd be interested in. Last night ( Tuesday) we had Brown Sugar BBQ Chicken. Basically I rock for cooking that. Anyways...
Ingredients
- 2 cups ketchup
- 1 cup packed light-brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cider vinegar
- Coarse salt and ground pepper
- 6 pounds chicken drumettes, patted dry
Directions
- In a medium bowl, whisk together
ketchup, sugar, Worcestershire, and vinegar; season with salt and
pepper. Set aside 1 cup sauce for tossing raw chicken; use rest for
baked chicken.
- Preheat oven to 450 degrees, with racks in upper and lower thirds; line two rimmed baking sheets with aluminum foil.
- Divide drumettes between baking sheets, and toss with reserved 1 cup sauce.
- Bake chicken until opaque throughout, 30
to 35 minutes, rotating sheets and tossing chicken halfway through. Toss
baked drumettes with 1/2 cup sauce, and serve with remaining sauce on
the side.
So here's a little secret. I only had a half cup clean after the ketchup , so I planned on filling that up twice with brown sugar. I forgot to fill it up a second time. Guess what ? It still tasted good. Gregg says it made it even tangier. Just a word for the wise.
I really need to cook more often. I have been doing a lot better than I used to but some nights I come home and just want to sleep for the WHOLE evening!
ReplyDeleteHahaha that is exactly the reason I haven't cooked for most of my pregnancy so far. I finally buckled down and told myself I wasn't feeling as nauseous and I have more energy so I need to be doing more.
ReplyDeleteHaha. Yeah, I've been working on it. I have been trying to not sleep all evening and just go to bed earlier. It's kinda working...only kinda though! Some nights I just pass out!
