Food :)

So lately I've been in a baking/ cooking mood. Which has worked out really well for Gregg. This week he got Brownies and Banana bread. I'll be making pie within the next few days too. I'm trying out this new recipe for a pie to maybe take to thanksgiving at the Brinkerhoffs. Yummo. So he's gonna get a taste of that soon. Also he wants me to make him this pizza bread stuff so i'll be doing that soon too.

Diet Coke Brownies
However this is what i've been making lately Brownies and Banana bread both are super easy. The Brownies were way easy. You use a regular fudge brownie mix. Add a can of Diet Coke. You don't have to use the eggs or the oil or anything. Just the Diet coke. You cook it for the same amount of time it says on the box. If you need to add about 7 minutes. After that it's done.

My personal opinion ,along with Gregg's , is that they aren't as awesome as regular brownies. They're still pretty good , but I would definitely use the fudge brownies. Also I think next time I would use half a can of diet coke. Anyways. Try it if you like. They're pretty good.



Banana Bread.
The Banana bread was a little more complicated. Last year I made a batch of banana bread that Gregg just loved. Well between all the moves I made , I lost the recipe. So after searching the internet for the BEST recipe for banana bread. The one closest to the one I made. It took me 2 hours but I found one I wanted to try.

I finally found this recipe. I had to alter it slightly but I got it figured out.

Ingredients

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
2 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
1 teaspoon Cinnamon

Directions

Preheat the oven to 350°F (175°C).
With a spoon, mix butter with the smashed bananas in a large mixing bowl.
add in the sugar, egg, and vanilla.
next add in the baking soda and salt and mix in.
Add the flour last, mix.
Pour mixture into a buttered 4x8 inch loaf pan.
Bake for 1 hour.
Cool on a rack.
Remove from pan and slice to serve.

The banana bread is super amazing and Gregg still loves it. It's the exact same as the one I used to make. My only comment is that we don't have a loaf pan so I used a smaller pan and if you do that you should definitely NOT cook it for an hour. It won't burn , but it will definitely have a crispy crust.

  2. Bummer! Yeah , we agreed to alternate this year we're doing thanksgiving here. My parents are coming up for Christmas though so maybe we'll make it to that too.
